Roussette de Savoie - White wine made from the Altesse grape variety, a terroir of quaternary glacial molasses on a steep hillside. Fermented in barrels, aged and aged on its total lees until bottling. Produced exclusively in 228Liters by methodically separating the different terroirs. The final blend is the right balance of these terroirs (jets, molasses, scree). With a complexity equal to its expression, this white wine is as well suited for aging as for the fleeting pleasure of an aperitif by the fire.
Growing up as a part of the Houillon clan meant that Corentin Houillon spent his youth foot stomping Poulsard grapes for Pierre Overnoy and learning the ways of zero additive winemaking from the master himself. He then went to study enology in Beaune and after graduating worked for a number of local luminaries including the great Stephan Tissot before heading overseas to work in the new world. Since 2019 Corentin has had his own domaine, on glacial soils nestled between mountains and surrounded by forest, Savoie sits between his native Jura and his wife’s home in Switzerland. He crafts pure and precise mountain wines from Jacquere, Altesse, Pinot and Gamay in the mould of his childhood mentor, but with an equisite mountain freshness.
