Sourced from the K1 Vineyard in Kuitpo, in the southern part of the Adelaide Hills where warm days are mitigated by cooling winds off the Fleurieu Peninsula. Organically farmed, though not certified.

Handpicked, destemmed, foot stomped twice daily, wild fermented for 3 weeks in open-top fermenters on skins. Transferred to stainless steel tank and aged on skins for a total of 99 days with occasional hand plunging before being pressed and bottled. Unfined & unfiltered.

Pronounced "pop-el-vei", vej is the Danish word for street and poppel træ is Danish for poplar tree. Poppelvej is the street of poplars, named after the street in Denmark where sommelier-turned-winemaker Uffe grew up.
