Jérôme Lambert tends to just a few hectares in Rablay-sur-Layon. A dedicated farmer with rigorous fruit selection, he makes zero/zero wines with incredible energy from his makeshift cellar. Pure and electrifying. Tiny quantities.
This is 100% grolleau from vines around 40 years of age on sandy soils. Fermented in whole bunches for two weeks before pressed to fibreglass to rest for nine months. Lifted and perfumed, juicy and mineral, so much energy. It will disappear from your glass but try to be a little patient.
