Starting from scratch in Burgundy is no mean feat. Frédéric Cossard was not born into winemaking, instead starting in the milk trade for ten years, before establishing Domaine de Chassorney in 1996. Working entirely organic with zero adds, Frédéric equates making unpasteurized raw-milk cheese to making sulphur free and chemical-free wines. His attention to detail and authentic expressions of terroir are unparalleled - a true master of natural wine with a cult following. "The Sous Roche comes from fifty year old vines planted in one of the steepest, shallowest parts of Saint Romain. True to site, this is a lively, lean and vertical wine that really blossoms in the glass. I think this is one of Fred's best wines every year and one of the first that he started making - like the Combe Bazin above this has the sumptuous glory of the vintage but also a cool reserve and juicy, mouthwatering acidity.
