Alessandro Viola Le Mie Origini Catarratto is a skin-contact wine made from 100% Catarratto grapes farmed organically. The vineyards are about 30 years old and are planted on clayey and limestone soil at 500-600 meters above sea level. Extended maceration on the skins, spontaneous fermentation with native yeast; the wine is then aged for nine months on its lees in big chestnut botti.
Alessandro Viola was fascinated in wine from an early age. The idea that nothing needed to be added or taken away from the wine if the grapes, soil and winemaking was exact and done well was drilled into him by his grape growing father.
