Directly pressed Grolleau and Cabernet Franc onto whole bunches of Chenin Blanc for 2 weeks then pressed to a fibreglass tank for 5 months. The flotation method used here gives the wine a very taught focus and herbaceous edge. Incredible food wine.
Guillaume Noire is one of the new faces of the Loire, making his first vintage from the village of Rablay-sur-Layon in Anjou in 2017. After leaving a career in advertising and branding in Paris, Guillaume trained with Loire producers, including Stéphane Rocher and, later, the Ménard family, who guided him in his first vintage. He knew from the beginning that he wanted to pursue a natural approach to his own winemaking — and he now farms just over two hectares without any herbicides or pesticides, and no additions in the cellar. Guillaume says he tends not to plan. Everything is moving, and every year he learns and adapts his thinking and process accordingly. As a result, his wines are bursting with freshness and youthfulness, very clean and correct, and super drinkable.
