Tai Rosso fermented on skins as whole clusters for 10 days. Two separate picks for acidity and finesse. Aged in ceramic amphora.
After studying viticulture at the Università di Trento e Udine Simone Ambrosini worked apprenticeships with winemakers in Italy and France such as Corte Pavone (Montalcino), Monteforche, Foradori and Domaine Chevrot. In 2018, Simone had his first vintage for his project called Indomiti. Situated in his home town, Vicenza, Simone rents different vineyards working them ‘More than organically’ and leases a small cellar space. His wines are full of personality and his star is rising as one of the great young winemakers in the region.
