Ethereal light red drinking with great purity is pretty much what got us into this whole wine thing. We slurped our way through ‘Aussie Reds’ to our very first pretty, light and slippery red from that place in eastern France… the question was asked, ‘Can we Just drink wine like this from now on?’ And the journey began.
The wine comprises of direct pressed pinot, whole bunch pinot macerated for 2 days, carbonic pinot, direct pressed pinot over whole bunches of Pinot Gris - sealed up for 5 days and direct pressed chardonnay… confused? Same! Wine making faff, gotta love it.
It’s the wine we’ve been trying to create since day one. With a few half successes and more than a few failures, we’re confident in saying this nails our initial wide-eyed brief. Light and pretty on its feet, aromatically coy and with enough going on for deep moments of contemplation. Most importantly, utter inhibition. Plonk a magnum on the table and it will literally evaporate.
