"2021 was our first year of farming vineyards in West Gippsland’s Baw Baw Shire. We were lucky to get our hands on some minuscule parcels of fruit from some exquisite sites in the highly sought after region and these wines are the result. In the cellar our approach is minimal intervention as we do our best not to interfere with the terroir unique to Baw Baw.
100% Pinot Noir from the Orchard vineyard on the western border of Warragul in West Gippsland’s Baw Baw Shire. The tiny post card vineyard with its 40 year old dry grown vines is perched atop the rolling hills beneath the Strzelecki Ranges and not far from the coast. The soil is comprised of old Volcanic Ferrosol (iron-rich Basalt). Destemmed to stainless steel tank for 21 days, lightly foot stomped and pressed to old French oak Barrique barrel for 15 months. Charlie and Simon started Château Acid in 2017 with a tiny run of 650 bottles. Lucky for us, they make a little more now. Zero adds natty from the Central Ranges. Always on point. We're big fans.
