"We really loved the fresh and racy acidity, and bright fruit profiles, in the two barrels we used for this wine. One barrel was 2021 Sauvignon blanc from Lonestar Creek and the other was 2021 Cabernet Franc from our vineyard in Dixons Creek. We refermented this blend in bottle, then disgorged by hand, after a month in bottle.

This is a really delicious fizz. Bright and racy, from natural acidity from early picking and a cool year. Elegant citrus, apple blossom and jasmine with pétillance."

Cré wines consists of JonJo McEvoy, Oliver Johns, and Angus Hean. Our focus is on the Yarra Valley, sourcing fruit mainly from the Dixons Creek Valley that runs from the Great Dividing Range down to Highbow Hill. We also source fruit from vineyards in the upper Yarra and the Christmas hills for their unique climates and soils.
