Hand-harvested grapes from Yungarra in Yallingup were de-stemmed directly into the amphora. The cap was plunged daily by hand and foot during fermentation, and then the wine was left to macerate on skins. After five months the wine was basket-pressed and then sent back to the amphora for rest and settling before bottling.
‘Lazy-bones’ winemaker Josephine Perry takes a hands-off approach in the winery, focused on letting the vineyard speak. Organic and biodynamic fruit and zero adds apart from minimal sulphur, her wines express the unique terroirs of the Margaret River and Swan Valley.
