Like the Chenin, Clayface Chardonnay is born and bred of terracotta amphora. Grapes were hand-harvested in the cool morning, then simply basket-pressed to the amphora. Natural fermentation was followed by malo and the wine was racked directly to bottle to preserve the purity of the season, site and fruit in the wine.
‘Lazy-bones’ winemaker Josephine Perry takes a hands-off approach in the winery, focused on letting the vineyard speak. Organic and biodynamic fruit and zero adds apart from minimal sulphur, her wines express the unique terroirs of the Margaret River and Swan Valley.
