Chalmers Vineyard, Merbein, Ancestral Method Lambrusco – hand picked, 68% Maestri, saignée, & 32% Salamino, whole bunch pressed, wild fermented, in old oak and open top fermenters, bottled before end of primary ferment with a splash of Chardonnay juice, unfined, unfiltered, undisgorged. Like biting into fresh cherry, with watermelon vibes, just a gentle bubble, finishing with watermelon rind refreshment.
