Sémillon from Jeff Traeger’s organically farmed vineyard in Vine Vale, East of the Barossa. Vines grown on deep sand over clay soil with optimum diurnal temperature. Grapes picked by hand & whole bunch tipped into a stainless tank to undergo a week of carbonic maceration. The bunches are then foot-stomped to release the juice & stop the carbonic effect on the aromatic. The tank is then closed until pressing three months later. Once pressed the juice is transferred in old French barrique to undergo seven months of elevage without ouillage. Bottled without sulphites/fining/filtration : Pur Jus Wine.
After years working around the world making wine, beer, sake & farming, Jean-Baptiste Courdesses built a winery in Basket Range, South Australia. Jean Bouteille wines are crafted exclusively from organically grown grapes, focused on regenerative practice and made without any additions, fining or filtration, only grape juice : Pur Jus Wines. The wines reflect the place & the character of the grape varieties that come from farming respectful of the environment, fauna & flora. These wines are made with intuitive reaction & natural instinctive decisions. This playful series of wine comes from the love exploring scents, tastes and experiences to be shared.
