It is made from the native Piedmontese variety Pelaverga; many years ago Olek’s relatives planted four rows of these vines in the Roncagliette vineyard, one of the finest cru of Barbaresco! This pelaverga comes partly from Roncagliette and partly from younger vines in Altavilla. 2021 is very light in colour, still more on small red fruit rather than pepper which is yet to come. Approx 2 weeks maceration on skins (til the end of fermentation) in stainless steel.
Polish champion snowboarder Olek Bondonio has quietly established a cult following from his old farmhouse in Barbaresco. He farms three and a half hectares amongst the region's top crus, utilising indigenous yeast fermentation and minimal intervention.
