Sourced from the K1 Vineyard in Kuitpo, in the southern part of the Adelaide Hills where warm days are mitigated by the Fleurieu Peninsula. Organically farmed, though not certified. Handpicked Gruner Veltiner, foot stomped, gently hand plunged & added to already-pressed Greco skins for wild ferment on skins. After 21 days total maceration, the resulting wine was pressed to old 600L oak puncheons for 10 month maturation on lees. Bottled by hand, unfined & unfiltered. 26ppm SO2 added.

Pronounced "pop-el-vei", vej is the Danish word for street and poppel træ is Danish for poplar tree. Poppelvej is the street of poplars, named after the street in Denmark where sommelier-turned-winemaker Uffe grew up.
