Handpicked from the certified organic Ablington Vineyard in Pokolbin, Hunter Valley. Farmed by Meagan & James, planted on sandy loam soils. 25% of the fruit was foot stomped & macerated on skins for 24 hours. Pressed to stainless steel to settle the following day, then racked to neutral French puncheons for wild fermentation & 10 months maturation on gross lees. Bottled by hand, unfined & unfiltered. Crunchy, salty, aromatic white with ample texture & intrigue. Go forth!
