Grapes are from younger vines are in clay and sandy soils 250 meters in elevation. Spontaneous fermentation at uncontrolled temperature with a mixture of whole bunch and de-stemmed fruit. Maceration for 12 days before pressing to a mixture of tank and old barrels for 8 month elevage. Bottled no sulphur.
Alessandro Viola was fascinated in wine from an early age. The idea that nothing needed to be added or taken away from the wine if the grapes, soil and winemaking was exact and done well was drilled into him by his grape growing father.
