Saison Aperitifs Marigold Vin Amaro

As the name suggests this is a wine based amaro but focusing on summer marigolds. Infusions are made of different varieties of marigolds, venus apricots, coriander seed and burnt blood orange. These are then blended into a skinsy fiano base wine, sweetened with local honey and aged in old pinot oak for the rest of the year.
The seasonal vermouths from Dave Verheul's 'Saison' range need no introduction. Dave has been hand-making his fine, gastronomic vermouths for a few years now - initially in the kitchen of his Melbourne restaurant Embla, and more recently in his own vermouthery.
