Brasserie Fantôme is the brainchild of Dany Prignon. Brewing out of an old stone cottage in the village of Soy in Wallonia, Belgium, Dany has gained a serious cult following for his complex, mind-bending farmhouse ales. Tiny quantities, as always.
These are bottles of Noël that Dany has been cellaring for three years, 2018 vintage. We think there's honey, caramel, black pepper and coriander, amongst many other things, however the recipe is secret (classic Fantôme). Dark, spicy and wild.
