We aged an imperial Berliner Weisse in 8 x 130L Tom Cat gin barrels for 8 months, then re-fermented on our house-mixed culture combined with 80kg of peaches and 60kg of strawberries. Fresh, bright fruit flavours start the journey and a slightly herbal/citrus character helps finish off the pallet. A crisp sherbet-like acidity adds complexity to this refreshing sour beer.
