Handpicked ten days after Palais. Yep, it’s the same block, same fruit.
Hand sorted thirty percent of the whole bunches into one tonne red tub fermenters. Thirty percent whole bunch. Seventy percent whole berry. Wild fermented in open one tonne red tub. Hand plunged twice daily. Seven days on skins, only. Basket pressed to stainless steel tank to finish primary fermentation. Racked to seasoned french barriques. Topped with seventeen percent whole bunch direct pressed Grenache (Palais). Elevage for seven months on fine lees. Blended in October ’25.
Single dose of 40ppm SO2 added post malolactic fermentation.
No fining. No filtration. No further additions of any kind.
Bottle in November ’25.

Drinky’s got leap! Pretty nose of fresh pomegranate. Black raspberry. A little jube. Cherry stone. Crushed stones. A fleck of crème pâtissière.
This is primed for chilling: tense and juicy. Pomegranate returns. Black plum. Life Savers Blackcurrant PastillesTM. Ultra light, chalky tannins. Very more-ish.
