A classic South Australian Stout fermented In charred American oak. Coming of age and developing a passion for beer within South Australian meant we were exposed to excellent stout. Su Legno Nero is hugely inspired by South Australian extra stout! By starting with a solid foundation, then combining this with our barrel fermenting process we were able to add an extra layer of subtle complexity to our version of a classic South Australian Stout. Roast malts and charred American oak, what could go wrong? Nothing.
Welcome to Su Legno ‘On Wood in Italian.’ Where science, practical brewing and craftsmanship converge to create exceptional barrel-fermented ales. Since 2022, we have been dedicated to brewing unique, interesting and delicious barrel fermented ales. We combine modern brewing science with techniques from the past. All of our beers are fermented in charred American oak barrels, without refrigeration, for a short duration of time before undergoing a secondary fermentation in bottle.
One aspect that sets us apart is our devotion to barrel fermentation. We believe that the marriage of beer, charred wood, horizontal fermentation and no refrigeration adds depth, complexity, and character to our beer. The combination of these factors imparts its unique influence, creating complexity in the final product. Each recipe is designed with drinkability at the front of mind and includes barrels as an ingredient.
