The Barrel Shepherd A Short Walk

We aged a saison in French oak barrels for 8 months, then refermented on our house-mixed culture combined with fresh nectarines from a local orchard. Each nectarine was hand processed to ensure maximum ripeness before adding to the tank. The beer aged on the nectarines for an additional 5 months before returning to barrel for 6 months to round out.
Tart and bright. This one throws tropical notes of feijoa and lime. Refreshing mid palate of stone fruit meets a lingering light funky spritz and light oak.

The Barrel Shepherd is a tiny brewery/blendery based in Wollongong, NSW using 100% locally grown, organic grain, whole fruit, sourced locally and/or organically when possible, and fresh pomace from trusted winemakers. Exclusively wild and native yeasts and bacterias to create nuanced beers that reflect their landscape - TERROIR!
