Aged saison was given 6 months rest time on Fiano and Pinot Noir pressings from Aristotelis ke Anthoula, and returned to oak for a further 10 months. This delightful beer has a light tartness and funk on the front end, a subtle mid palette of bright wine and oak character with a clean and fruity finish that smacks of red berries, cherry and plum.

The Barrel Shepherd is a tiny brewery/blendery based in Wollongong, NSW using 100% locally grown, organic grain, whole fruit, sourced locally and/or organically when possible, and fresh pomace from trusted winemakers. Exclusively wild and native yeasts and bacterias to create nuanced beers that reflect their landscape - TERROIR!
