Handpicked from the certified organic Windowrie Vineyard in Canowindra & from the Freeman vineyard in Hilltops, practicing organics. Merlot, Shiraz, Cabernet Sauvignon & Graciano were direct pressed to stainless steel to begin fermentation. As the fermentation develops the wine is then bottled before the natural sugars and yeasts completely dissipate, this allows the natural carbonation to develop once the bottle has been crown sealed. Bottled unfiltered, disgorged with zero additions.
"Overtime we have begun to realise that not only are pet nats better when they are disgorged, but are also better when left in bottle for longer before disgorging and being released. This is a blend of merlot, shiraz, cabernet sauvignon and graciano. While bone dry it tastes like it has a bit of residual sugar! This is in part due to its richness and from aging. This pet nat is reminiscent of our favorite summer dessert: fresh strawberries lightly macerated with sugar and a dollop crème chantilly" - Bob & Tom Colman
