Escursac, Fogoueu and Manto Negro, destemmed and fermented until dry. Free run juice from the later harvested Escursac was added then bottled for second fermentation. Undisgorged. Bosquet is a Mallorcan word for troublemaker and the label was designed by Cati’s daughter Neh.
Red fruits with waves of freshness rolling over the palate. Strawberries, sour cherry, pomegranate, mineral and soft herbs. Having recently enjoyed on a warm sunny day, it was thirst quenching and beautifully expressive.
Ve d’Avior is the personal project of Cati Ribot, a third generation grape farmer, the inaugural vintage in 2019. Her families 14 hectare estate, Galmes I Ribot, is located in Santa Margalida, north east Mallorca. An island bathed in sunshine, the summers are hot, the winters mild. Fifteen kilometers from the Mediterranean sea near the Bay of Alcudia, the vineyards benefit from both the Mistral and Tramontana winds in addition to the sea breeze. The soils of Santa Margalida are iron-rich clay with a lot of calcareous rocks.
