This delicate red is made from 100% Callet grown on clay-limestone soils in Sineu and Petra, Mallorca. Fourteen days of skin contact, approximately 10% whole bunch layered "lasagna style" with destemmed grapes. Aged six months in 500L used French oak tonneaux, it’s a remarkable red—profound yet light, highly mineral, and brimming with Mediterranean garrigue spices.
Ibon, originally from the Basque Country, produces wines in both Murcia and Mallorca, beginning his winemaking journey as a “nomadic” winemaker, moving across various regions of the Mediterranean. In Mallorca, Ibon crafts his wines at Cati Ribot's cellar in Santa Margalida—a dynamic and inspirational space where five winemakers share resources and ideas: Panduro, Cati Ribot, Sistemi Vinari, Jaumet, and Cati’s employee. In 2021, Ibon took a significant step forward by purchasing his first vineyard, an old plot of callet and mantonegro near Felanitx in southeast Mallorca.
