Pinot Gris and Gewürztraminer picked early, combined at the crusher and allowed to soak on skins for a few hours for colour, flavour and texture before being pressed to tank for 100% natural fermentation. Bottled near the end of fermentation for natural carbonation with no additives.
Chamomile tea, dried apricot, fairy floss with citrus and rose water with buttery brown sugar complexity. Fizzy fruit tingles, strawberries and cream and toffee apple palate reined in by fresh natural acidity.
