2023 Denton Shed Skins Chardonnay

Chardonnay, but not as you know it. This skin-contact release leads with nashi pear, almond meal and a bitter squeeze of grapefruit rind. There’s grip and phenolic texture, and a slither of quince paste adds an extra sweet–savoury curve.

The fruit was picked at the end of March. 90% was destemmed, then wild fermentation was left to run its course naturally - with a light touch throughout.
The wine was pressed off skins and aged in three 500L puncheons-one of them new-for quiet maturation through the year.
Bottled late 2023 without fining or filtration.
