Biodynamically grown Chardonnay from Orange. The grapes were picked early and thrown on a mixture of destemmed and whole-bunched skins, where the free-run juice was drained out over a couple of days until the barrel was filled. Then after a total of three years sleeping on gross lees, this super freaky high-acid and slightly oxidative wine was bottled without the addition of sulphur straight out of the barrel. It’s moreish and chewy, has subtle toffee and stewed apple notes that all underline a generous squeeze of the lemon.
