The Clare Valley is renowned for its Riesling fruit, and we love the distinct citrus flavour and crisp minerality that the sub-region of Polish Hill River delivers. The fruit from this parcel was picked on the 4th of March, it was destemmed and gently pressed straight to stainless steel. The juice was inoculated with a neutral yeast and cold fermented to retain freshness and aromatics. It was gently filtered prior to bottling. Only 2300 bottles.
