Ziggy's Native Bunya Nut Miso

REGION: Sydney, NSW
SIZE: 300g
Naturally fermented over 6 months. Australian Native Bunya pine trees have a history on earth dating back millions of years - and are known as 'living fossils'. Each tree lives for several hundred years - dropping cones weighing up to 10 kg - full of delicious starchy nuts.
The Bunya pine has held incredible cultural and culinary significance for the first nations peoples of Australia for thousands of years. Here the nuts have crossed paths with a traditional asian fermentation technique - and matured for 6 months.
The result is the most umami rich paste, with pieces of cured Bunya nut in each jar, to add the ultimate depth to any sauce, marinade, soup or stock.
