
2023 Pride of Lunatics Ignimbrite – Cabernet Sauvignon

The king is dead, long live the king. Semi-carbonic, small portion destemmed and larger portion remained stemmed and whole. Stomped after 10 or so days – finished whole bunch ferment. Basket pressed after two or three weeks in total. Light to mid bodied Cabernet. Dank green tobacco and herb on the nose – finishes long and dry, with herbs and spice. Acids are lively. Drinks well across the temperature spectrum.
Our main aim is to regenerate our soil’s vitality and health whilst producing natural wine as by-product. Over the initial 3 years of working with this vineyard we have applied numerous biodynamic preparations, tanks of compost/microbial teas and dosed the vines with some organic vitamins and nutrients. We allow grasses and other plants under vine to grow long and lush before cutting them down – ideally leaving a heavy layer of organic matter to cover the soil surface and break down. We plan on continuing to dry farm these vines. These practices, along with a whole lotta love and gratitude, have allowed us to grow our grapes without needing to apply any of the pesticides – organic (copper and sulphur) or synthetic. All the above has ensured that our grape cultivation methods are probiotic rather anti-biotic.
We want to allow the life force and vitality inherent within the grapes (microbiome and all) to be captured within the wine. We believe that grapes grown in a biological way have a higher vitality, which results in robust and healthy spontaneous ferments. The resulting wine needs little intervention to end up balanced and stable (relatively). As of 2023 our wines have no added sulphites and are unfined and unfiltered. We aim to make living wines. All our 2022 & 2023 wines are grown by us.
