Vineyard: Inkwell Wines Shiraz, Kaurna Yerta (Tatachilla, SA). Regenerative Organic Certified.
Winemaking: Carbonic Maceration for 3 days then pressed to tank for 7 months. ‘daa_see’ wines are made with no additions, added preservatives or filtration and are crown sealed for freshness and stability as this is a living wine.
“2024 Daa_See Carbonic Shiraz: Darcy Chiswell took the most hands-off approach of all the winemakers, letting his batch of grapes ferment carbonically as whole bunches with no additions, including no added preservatives. He also lists all the music he listened to during the process, from Ethel Cain to Mo’Ju to G Flip to Tracy Chapman. The palest and most developed looking of the wines, it’s also the most rustic: almost pinot noir-like, rosehip and currant and undergrowth flavours, slightly tart, powdery, sticks-y and yeasty to finish. Excitingly ‘daa_see’ wines was selected to participate in Inkwell Wines ‘Hacking the Future of Shiraz’ competition which provided 5 hand-picked ‘australian’ winemakers 1 tonne of free Regenerative Organic Certified Shiraz grapes. The purpose of this project is to regenerate interest in Shiraz with ethical, high quality, and approachable styles of producing that resonate with younger, diverse, and new wine drinkers. We are making wine like our industry depends on it! The 6 wines (including one from Inkwell Wines) will be judged by a diverse group of international judges including Marcus Ellis - Wine Companion (australia), Christina Pickard – Wine Enthusiast (USA), Fongyee Walker MW and Edward Walker MW – Dragon Phoenix Wine Counsulting (China), Jeff Porter – Wine Enthusiast (USA), Tamlyn Currin – Jancis Robinson (UK), Erin Larkin – Wine Advocate (USA) and convenor Mike Bennie – WineFront (australia).
