No so2 added to fresh juice so as to retain colour and to allow full malo. Rough racked from tank after settling overnight. Transferred to a mixture of Qvevri and large old French oak. 12 months maturation the gently racked to tank and allowed to settle on super fine light lees. Not filtered or fined - just a small so2 addition prior to bottling.
Cobaw Ridge was established in 1985 by Alan and Nelly Cooper. Vines were planted on granitic, sandy soil in the cool climate Macedon Ranges, on the cusp of the Great Dividing Range at some 610m. Their positioning, in a natural amphitheatre, provides the perfect place to produce terroir-driven wines.
