Grapes are sourced from young vines between 7-13 years old. 8 hours ’Salasso’ of healthy ripe Sangiovese grapes in concrete tank. Four more months in concrete to finish fermentation and malolactic. Aged 12 months in 500L Allier oak barrels. Only couple of thousand bottles were made. Layered complex nose. Dried roses and ripe berries. Classic Pacina ‘chalky’ tannins. Structured; alcohol, acidity and flavours all in the right spot.
The Pãcina winery is in an ancient convent dating back to the 10th century. The 10 hectares of vineyard belonging to the estate are surrounded by another 15 hectares, divided among olive groves, orchards, vegetable and cereals.
