A combination of directly pressed juice and fruit macerated for 5-7 days (in whole bunches and destemmed) About a quarter of the blend was elevaged in barrel. Vivid, fruit driven and lifted. Rhubarb and ripe sweet strawberries. Watermelon white, pomegranate, tang. Sappy, slippery, pops of life and fruit. Summer vibes to the max.
Ve d’Avior is the personal project of Cati Ribot, a third generation grape farmer, the inaugural vintage in 2019. Her families 14 hectare estate, Galmes I Ribot, is located in Santa Margalida, north east Mallorca. An island bathed in sunshine, the summers are hot, the winters mild. Fifteen kilometers from the Mediterranean sea near the Bay of Alcudia, the vineyards benefit from both the Mistral and Tramontana winds in addition to the sea breeze. The soils of Santa Margalida are iron-rich clay with a lot of calcareous rocks.
