Vincent farms five hectares near the dormant volcano dome of Puy de Dôme in Auvergne. With a degree in oenology and experience with Patrick Meyer and Bruno Schueller in Alsace, he works biodynamically to produce honest, pure and expressive terroir-driven wines. Vincent also makes cider. He purchased Normandy apples and transported them to Auvergne in big bags. The fruit is from an orchard free of chemical sprays which is eco-grazed by sheep. The apples are pressed before spontaneous fermentation occurs, which continues in bottle for carbonation and opacity. Raw and wild with depth and structure.
