We’re releasing 2021 Estival Dichotomous – farmhouse ale refermented with hand-processed Rio Grande Valley watermelons! For this fruit-refermented farmhouse ale, we brewed with well water, Organic Perle from The Oregon Hophouse, Llano Pilsner and Denton County wheat from TexMalt, flaked oats, and raw wheat. We fermented in stainless steel with our mixed culture of brewers yeast and native yeast from our land. We then hand processed and pressed fresh watermelons from the Rio Grande Valley and added the juice to the beer for refermentation. Finally, we naturally conditioned the beer through refermentation in the bottle/keg.
