Mikkeller Baghaven Bière de Cabaret (Blend #2)
Mikkeller Baghaven is an exploration of spontaneous fermentation influenced by local terroir, crafting barrel-aged Danish Wild Ales and Rustic Shipyard Ales with native microflora on the Copenhagen harbor front. Baghaven is home to twelve large oak foeders, ranging in size from 3000 to 7000 liters, and over fifty 225-liter California Chardonnay barrels.
Oak Fermented Rustic Danish Shipyard Table beer. Blend #2. Bière de Cabaret is influenced by the pale beers made for drinking in public houses, or cabarets, of the Nord and Pas de Calais departments of Northern France. A simple low alcohol grist bill was enhanced with Danish raw buckwheat and emmer, fermented with our unique house yeast and aged in a red wine foeder for 8 months. Blend 2 sees a few minor changes from blend 1 to enhance its drinkability. These changes include increasing the bittering and whirlpool hop additions to bring more floral, grassy, and mild citrus notes, and the introduction of a small portion of unmalted emmer to help increase the body in this low ABV beer.
