Brewed with 100% Australian grown grains. Organic Pilsner, Winter Wheat & Raw Wheat from Voyager (NSW). Paired w/ Australian Flaked Wheat & Flaked Rye. Hopped w/ Tettnang (DE) & Nelson Sauvin (NZ) in the boil to 24 IBU.
Primary fermentation in stainless w/ a blend of saison yeast & three strains of brettanomyces from Mogwai Labs for 6 weeks. Packaged on September 20th 2023 and can conditioned for 6 weeks. "Aroma's of gooseberries & doughy grains w/ a restrained brett character. Some elements are akin to sauvignon blanc.
