"The juice and must of grapes are reduced in half by boiling (3-4 days operation), and the resulting liquid is then fortified with brandy. Once the "wine" reaches 16% alcohol by volume it is placed in oak casks to age for 1 to 3 years, sometime more. There is no fermentation process. The end result is a Vin doux Naturel that is rich and unctuous." - thanks Paul!
"After quitting his day job at 40 years old, Éric Goypieron bought a house and small winery just near Château-Chalon. After working alongside the iconic Jacques Puffenay and good friend Michel Gahier, he's now a one-man show doing everything himself, farming his two hectares entirely organically and making the most natural wine possible - zero adds, zero sulphur. Éric has also rejected the restrictive Jura appellation, choosing to bottle 'Vin de France' and work just outside the rules."
