As James describes it, a whimsical vermouth! The fruit, in this case Tempranillo, was grown by Greg Horner in Gumeracha, Adelaide Hills. James himself grew cherries and persimmons in the Basket Range, and infused with an array of local botanicals, all foraged within the perimeters of the farm. An increasing number of Australian winemakers are turning their sites to vermouth, because, why not? It’s delicious. And to express it locally gives us so much more scope for flavour profiles when we’re so used to Mancino or Campari. Whole bunch direct pressed Tempranillo to tank for primary fermentation. Once again the ferment reached the desired sugar concentration spirit was added the fortify the juice halt fermentation. Tinctures of cherries and persimmons from our farm along with an array of native botanicals. It was racked to an old french oak hogshead and rested. Racked and bottled in spring.
