"For our 2022 ‘fallen quinces’ release we have once again started with beautiful organic pineapple quinces grown north of Melbourne. Using a high quality grape spirit we make several infusions with the quince as well as saffron, bay leaf and blood orange. These infusions are blended with our moscato base wine, grown on a small family run vineyard in central Victoria. The mix is bittered using two kinds of wormwood and then sweetened slightly using a caramelised quince sugar. Finally it is left to age resting on quinces that have been slowly burnt over a wood fire, adding an extra layer of bitter complexity. All of our vermouths are vegan. Best served solo over ice or in an Americano with a slash of soda and your favourite bitter orange liqueur."
