2021 Domaine Courbet Côtes du Jura Savagnin L'Origine Ouille

Scents that would knock a florist flat. Vibrant like a market in Spring. Clean and fresh too, somehow, with complexity to the core, such a wild and beguiling version of Savagnin. Grown in the Marnes Bleus clay soil that are unique to this region and that Savagnin excels in. Why “L’Origine”? Because Savagnin is one of the oldest varietals and its genealogy makes it one of the parents of most grapes worked with today. This small cuvée comes from young vines that are crushed and put through a skin maceration for 18 hours. The fermentation and ageing process takes place half in neutral oak barrels and half in stainless steel tank. This wine is topped off or ouillé during the ageing process in barrel.
Domaine Courbet was founded in 1896 and consists of just 7.5 hectares, half of which are in the prestigious Château Chalon appellation. making small quantities of immaculate wines in a fine elegant style, very focused on terroir, with a technical yet light touch approach to his winemaking that brings out the maximum expression of the region and its varieties.
