Savoie Chautagne - Jacquère on a steep hillside of outcropping molasse facing South-West. Shallow quartz soil giving the wine liveliness and freshness. Exclusively vinified in demi-muit, aged on lees until bottling. This cuvée reflects the typicality of Jacquère, fruity and sharp with a body provided by its aging on total lees.

Growing up as a part of the Houillon clan meant that Corentin Houillon spent his youth foot stomping Poulsard grapes for Pierre Overnoy and learning the ways of zero additive winemaking from the master himself. He then went to study enology in Beaune and after graduating worked for a number of local luminaries including the great Stephan Tissot before heading overseas to work in the new world. Since 2019 Corentin has had his own domaine, on glacial soils nestled between mountains and surrounded by forest, Savoie sits between his native Jura and his wife’s home in Switzerland. He crafts pure and precise mountain wines from Jacquere, Altesse, Pinot and Gamay in the mould of his childhood mentor, but with an equisite mountain freshness.
