2016 Crawford River Cabernet Sauvignon

"As usual, each individual block was separately hand picked and fermented in open fermenters. De-stemmed only (no crush). 5-8 day cold soak was carried out prior to fermentation. The wines were then pressed to tank and settled prior to being racked to barrel for malolactic fermentation. 25% of this Cabernet was left in the fermentation vessel and sealed for a period of extended maceration of 8 weeks prior to pressing. No additions. No added acid, not fined or cold stabilised. Coarse filtered to bottle. Tartrates may have settled, which is a natural and normal process. 2 years in French Oak - mostly old."
Crawford River is an iconic family producer in the cool climate of Henty in Victoria's south-west. The Thomson family have been producing wine from their estate since 1985, making the move to organics in 2008. The vineyard is managed by hand without synthetic fertilizers, pesticides or fungicides, using organic composts and grazing sheep.
