The style is medium / full bodied and yes, the acidity of all Simon's wines makes them some of the most nourishing and digestible wines I know. | Perfect fruit is harvested, destemmed, fermented in concrete and élevage takes place in old oak. This historic region, Cahors, about an hour north of Toulouse, is one of the most unique in France and the distinctive wines that are grown here have been rightfully famous and lauded for centuries.
