WINEMAKER: Maya Sallée & Nicolas Fernandez
REGION: Cahors, FR
VARIETAL: Malbec
VITICULTURE: Certified Organic/Biodynamic
100% Malbec, a blend of vintages 2018 and 2019. From a single parcel, 0.7 ha, these 37 year old vines are on Kimmeridgian limestone subsoil covered with iron rich red clay limestone. NE facing and surrounded by a forest, this plot is one of the last to ripen. De-stemmed, four weeks maceration, elevage on lees for 2 and 3 years in used barrels.
"Forest floor and pine invite. Deep fruit, silken tannins pop. The length lingers long and fine. Enriched with a patina of oak and spice. Salivating. Violets. With air comes a lovely vein of freshness, supported by chewy yet discreet tannins. In the style of St Joesph. Benefits decanting." - Liz, Vivant
There are two distinct terroirs and styles of the Cahors appellation: the alluvial valley of the Lot river, and the limestone plateau. Located in Trespoux-Rassiels, on the limestone causses overlooking Cahors, the soils here are what make these wines truly remarkable, with all Maya and Nicolas’s 10 hectares of vineyards situated on the plateau. A mix of clay limestone, Kimmeridgian limestone and Siderolithic. Kimmeridgian limestone is most famous as the bedrock for Chablis and Sancerre, it brings minerality and acidity to the fruit. Siderolithic are iron rich clay soils bringing umami and texture.
